6 ozs linguine (4-8 oz., or fettucine)
10 tbsps butter
8 ozs mushrooms (sliced)
garlic cloves (minced)
3 ozs cream cheese (cut into small pieces)
2 tbsps chopped parsley
1 tbsp fresh basil (chopped)
23 cup boiling water (from the noodle pot)
1 lb shrimp (cooked)

Linguine With Shrimp Scampi

Ingredients:

Vegetable Oil
Kosher salt
1 1/2 pounds linguine
6 tablespoons (3/4 stick) unsalted butter
5 tablespoons good olive oil
3 tablespoons minced garlic (9 cloves)
2 pounds large shirmp, peeled and deveined
1/2 teaspoon freshly ground black pepper
3/4 cup chopped fresh parsley
Grated zest of 1 lemon
1/2 cup freshly squeezed lemon juice (4 lemons)
1/2 lemon, thinly sliced in half-rounds
1/4 teaspoon hot red pepper flakes

Drizzle  oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.

Meanwhile, in another large, heavy-bottomed pan, melt the butter and olive oil over medium heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 tablespoon of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

Ingredients

  • 1 Tablespoon lime juice
  • 2 teaspoons finely chopped fresh jalapeno pepper
  • 1/2 cup pineapple preserves
  • 1 pound uncooked large shrimp peeled and deveined
  • 2 egg whites
  • 2 Tablespoons cornstarch
  • 2 cups sweetened flaked coconut

Directions

  1. Combine lime juice, jalapeno pepper, and pineapple preserves in a small bowl and mix well. Cover and refrigerate until ready to serve.
  2. Preheat oven to 400 degrees and line a cookie sheet with parchment paper.
  3. In a small bowl beat egg whites with a hand mixer until soft peaks form.
  4. Place cornstarch and coconut on two separate plates. Hold shrimp by the tail and dip and coat the shrimp with cornstarch. Next, dip the shrimp in the egg whites and finally in the coconut coating well.
  5. Place shrimp on the cookie sheet and bake for 15-17 minutes or until coconut is a golden brown. Make sure to turn it once halfway through (around 8 minutes into cooking time) to make sure both sides brown.
  6. Serve with pineapple dipping sauce.

The BP Oil Spill & the Shrimp Industry – and Update

While BP oil reported 7.7 billion in profits for the last quarter of 2011, Gulf fisherman are having the worst season ever.  Catches are down 80%.

Shrimp boats are returning to dock nearly empty, hauling in deformed, discolored shrimp, even shrimp without eyes.

After 2 years, BP is finally going to be going to trial and we hope the company is forced to make this dire situation right. The oil is still very much in the ocean, under sand and polluting the water.  Just because this story is out of the limelight does not mean the repercussions, economic and environmental, has faded one bit.

No Lemon or Tails Required – Bacon Wrapped Shirmp –
Maple bacon, any size shrimp (I like tiny), skewered (weber kebob skewer set is great), between pineapple chunks, and baked at 420 for 20 minutes or grilled. Serve over white rice, YUM!
